We want to stay true to our own values, and one of our core beliefs is that service is a collaborative effort. We believe your experience at Vermilion is influenced by more than just your waiter: the person who took your coat, mixed your drink, cooked your food, washed your dishes, and coordinated the seamless service all played a role and deserve a portion of the tips.
Vermilion doesn’t take any part of your tips or service charge. It’s not for us – every cent is given to the staff and not 1 cent goes to the restaurant.
Service charges or tips left on a credit card are subject to VAT and PRSI, which we deduct at the source. Cash tips are pooled among the team but are not handled by us. We only automatically add a service charge to tables of 5 or more, but the team would greatly appreciate tips for smaller parties. Cash tips stretch a bit further for the team, but any form of tip is gratefully received.

The “Tips and Gratuities Act” requires the employer to distribute to his or her staff any tips or gratuities received by the employer by an electronic mode of payment
We add a discretionary 10% service charge to your bill only in the case of 6 adults or more. We want to assure our customers that 100% of ALL tips, gratuities and service charges received are fully distributed to staff in line with the Payment of Wages (Tips and Gratuities) (Amendment) Act 2022”
