Head Chef - Paul Ninan

Head Chef Paul Ninan has been with Vermilion since we opened in December 2001. Paul worked at the 5* Taj Intercontinental in Bombay before coming to Ireland in 1990 where he worked in Chandni Restaurant and as Head Chef in Poppadom Restaurant before joining Vermilion.

What's in a Name?

Vermilion, powdered red lead, is applied as a dot on the forehead, like the regular 'bindi', or in the parting of the hair by all suhagans. It is worn by married women, as a visible expression of their desire for their husbands' longevity.

Red is the colour of power. Vermilion is thus a symbol of the female energy of Parvati and Sati. Sati is believed to be the ideal wife, one who gave her life for her husbands' honour. Every Hindu wife is supposed to emulate her. It is believed that Parvati protects all those men whose wives apply vermilion to their hair parting.

This restaurant is under new ownership, so we decided to tie it a go after many years. The night was all round excellent. The food is just that bit more "foodie" than the average Indian restaurant, while remaining very good value. My partner and I had their 3 course menu for 2 (including tea/coffee AND a bottle of wine), for €75. My partner's jumbo prawn main course was cooked perfectly and spiced exactly according to the menu. I went for a lamb chettinad, which was very hot as per the menu - just the way I wanted it, with the added bonus of the tenderest lamb I've eaten in a while. The service all through the meal was exemplary - attentive and knowledgeable, without being intrusive. In short, we should support this neighbourhood restaurant - great food, service and value - what more could you want?

We visited Vermilion early (7pm) yesterday evening. It was our first visit and we were very impressed. There were already other diners there. Lovely decor with nice low 'mood' lighting, and good friendly service. The food was excellent - the Sizzling starter particularly so - with reasonable portions and nice presentation. We will definitely be going back.

Had a fabulous Indian meal at Vermilion,Terenure last night. Only in city for a few days and we pre-booked meal, Was glad we did as restaurant very busy (Thursday night). Excellent hostess (Louise) - she is also new owner / manager, greeted us, & made us feel very welcome. Male waiter very helpful with menu advice, and the food did not disappoint! We both had chicken dishes, lovely and tender, vegetables dishes were very fresh and perfectly seasoned. Good choice of wines, reasonably priced. Lovely relaxed atmosphere. WC facilities spotless and fresh flowers by hand-wash basin showed that extra little attention to detail! We had a comfortable table for two, crisp white linen tablecloths, other tables accommodated families & small groups, but all in a very intimate & unintrusive way. Great food, service and value for money. Highly recommend & will definitely be back. Thank you very much to Louise & her staff.
